Dukkah preparations…dried lemon zest

I’ve been wanting to experiment with making my own dukkah for quite some time now. We spent some time in Copenhagen late last year and while Denmark is by no means my food mecca, there was one meal I had there which remains etched in my memory. It was the simplest of meals, a light lunch wrap at an unassuming, modest cafe at basement level in a busy little side street of Nørrebro .

The cafe was run by a brusque Egyptian woman who clearly didn’t suffer fools, or indecision. Feeling slightly under pressure to make a choice I scanned the menu from bottom to top until I found the appropriate price range for my travel budget (eating out in Copenhagen is horrendously expensive) and chose what I thought would be a rather ordinary wrap.
